New Chef Dons Apron at Sbicca Restaurant in Del Mar
Susan Sbicca Departs, but Seasonal American Cuisine Still Stars
at Popular Seaside Eatery

SAN DIEGO – January 25, 2010 – Sbicca Restaurant in Del Mar is serving up some change, but its seasonal menu of modern American cuisine will remain the same. Sbicca announced today the promotion of Bryan Graham, former chef de cuisine, to executive chef.

Sbicca Co-founder and Chef Susan Sbicca has decided to pursue culinary interests outside the restaurant, including writing her first cookbook. However, she will continue to have creative input on menu development.

“Since Chef Graham began working with us as a sous chef in 2008, he quickly honed his skills and the same fresh seasonally-inspired cooking philosophies as me,” said Susan Sbicca. “Diners will like his creative take on many of my signature dishes they have grown to love, as well as new menu offerings which will debut in the months ahead.”

Graham has been on course to head up his own restaurant for years, working at well-known eateries from the East Coast to the mountain states, including the famous Black Dog Tavern in Martha’s Vineyard, Massachusetts, Hilton Hotels in Boston and Excelsior Café in Telluride, Colorado.

He developed his cooking skills early on, studying at the Smith Vocational High School for Culinary Arts at the age of 14. He earned his Culinary Arts degree from Southern New Hampshire University in 2003 and in 2005 began teaching at Putnam Vocational High School, grooming the next generation of cooks and sharing his love of the culinary craft.

“Chef Graham plans to continue the tradition of tastefully preparing the finest seasonal American cuisine Sbicca is known for,” said owner Dan Sbicca. “His new menu is sure to please our regular and new diners alike.”
